I went walk about yesterday, sorry my headaches (weather related) kept me from my stamp room. I did however get my backyard lawn mowed, melting in the process. I also picked my first green beans and made a wonderful dish with them. It was a late night as I could not sleep, so I was up at 1:00 looking online at the sneak peek items from the new catalog. Oh my, I am loving the new colors. My order was placed and shipped today, so I should have it by Tuesday at the latest. I am so excited!
Today was another hot day and something is still getting my tomatoes! Tonight, I cleaned up some of my table and made a card. I need a birthday card for a friend whose birthday is next week. So tonight I made a card using her favorite color, pink. I used a Pink Pirouette card base and two white mats, one embossed with the tulip e-folder, the other I stamped Pretty in Pink and Bashful Blue flowers and Wild Wasabi leaves. I wrapped my PPink ribbon around one mat and tied it in a knot. My flower is handmade using the five petal flower punch out of white cs rubbed in Pretty In Pink ink and sprayed with Pearl glimmer mist. I added a sentiment and eyelet lace to my pocket and a rhinestone brad and pearl stick pin to my flower. I will be able to tuck in a gift card for something fun!
So do you like this shade of pink, or do you like the brighter colors? I have days when I prefer the softer colors, then others when I like working with brighter, bolder ones.
Aren't these beans lovely? I sauteed them in garlic and Olive Oil, added red bell pepper and onions, diced tomatoes and some shrimp, cooked it a bit, then added sour cream to make a thick sauce then added cooked spaghetti. Oh my gosh, it was so good. The beans were just perfect, not crisp or too soft! I had left overs as well, my favorite part of cooking simple dishes.
I have been asked for the recipe. So Mary P. here it is: I snapped beans, 1/2-3/4 cup, I sauteed them in a pan with olive oil(just enough to cover the bottom) and 1-3tsp of minced garlic( I like a lot), add 1/2 chopped red bell pepper and 1/2 small onion chopped(about 3/4" pieces, bit size), and half can of diced tomatoes, you may also add spices at this point, oregano, basil, chili flakes if you wish, I didn't because I was tired and hungry and forgot. Next add 15 shrimp(3/4 pound) I bought 16-20per pound. Do all of this quickly, do not stop to cook youjust saute add the next item etc, until you get to the shrimp. You may have to turn the fire down a little so as not to burn anything, depending on your burner, be sure and stir continually. Once shrimp have turned pink add sour cream to make a sauce. I just add what I need for the ingredients I have so this is a guess, 1/3- 1/2 cup. Last add cooked spaghetti about of 1/4-1/3 small package, stirring everything in. This will look like a spaghetti salad, not like spaghetti with sauce, the sauce only servesas a binder and for flavor. I ate the last serving yesterday and did not take a picture. Next time I make on of these dishes I will take pictures. I am limited as to what I am able to eat and how spicy the food is, so I cook a lot of dishes like this during the summer. From start to finish it takes me about 30 minutes and they taste so good. If you put the green beans in first, there will be no bitter after taste from the beans in this dish, also if you do this quickly, the beans will not be overcooked. I will post this recipe as my first over on my new blog that I set up a long time ago but never have posted to, hopefully this weekend. Thanks for asking Mary.
